A warm Cuban-style chicken guisado is a great meal on a cold, winter night. This simple Cuban stew is easier to make when prepared in the slow cooker. Prepare it in the morning and enjoy this richly flavored dish for your next evening meal.

Ingredients

  • 1 tablespoon oil
  • 8 boneless chicken thighs
  • 4 large carrots roughly chopped
  • 4 tablespoons sofrito
  • 4 tablespoons recaito
  • 2 tablespoons adobo seasoning
  • 1 small bottle Spanish olives with bell peppers, drained
  • 1 can (8 ozs) diced tomatoes
  • 1 medium sweet onion, chopped

Directions

    Heat 1 tablespoon oil in a frying pan and sear the boneless chicken thighs.

    Place chicken at the bottom of the slow cooker.

    In a mixing bowl, add the rest of the ingredients together and stir lightly.

    Pour mixture on top of the chicken.

    Cook on low for 6 hours. At 6 hours, use 2 forks to pull chicken thighs apart, stir, cover and slow cook for 2 more hours.
