Cuban sandwiches with lechón pork are an iconic meal in Cuban fast food. It used to be known as a Cuban mixed sandwich, or a ham and cheese sandwich with roasted pork, mojo and pickles. I like making it at home with leftover pork with mojo if I’m even lucky enough to have any leftover! I guarantee this is a spectacular snack.

Ingredients

  • 4 baguettes
  • Butter at room temperature
  • 4 slices roasted lechón pork with mojo
  • 4 teaspoons mojo (optional)
  • 4 slices English ham
  • Sliced pickles
  • 4 slices Swiss cheese
  • Mustard

Directions

    Cut the bread in half lengthwise.

    Spread some butter on each half.

    Put a layer of roasted lechón pork and some mojo if you want. Then, add some English ham and pickles.

    Cover it with Swiss cheese, spread mustard and cover with the other half.

    Warm up the sandwiches on a panini grill if you have it so that the crust is golden and crunchy. Your press shouldn’t have grooves like the ones in panini presses.

    Once the grill is hot, cut each sandwich diagonally in half and serve immediately.

    Some people like adding a layer of salami as well.
