Christmas is a time of sharing and gift giving, and what better to give than homemade dishes prepared with love! In the days leading up to Christmas, I tend to bake cookies, palmeritas (palmiers) and cakes, or make fruit jams to give to my loved ones. This year I chose this cranberry orange cake as my favorite, and it’s already been a hit with many who have received it!

Ingredients

  • 4 eggs
  • 1 stick of soft butter
  • 1/2 cup water
  • 1/2 cup natural orange juice
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 1 box vanilla instant pudding
  • 1 tablespoon orange zest
  • 2 cups fresh cranberries, halved
  • Powdered sugar to decorate (optional)

Directions

    Preheat the oven to 325 °F. Spray a round pan or Bundt pan with baking spray and coat with flour.

    In a blender bowl, mix the eggs, butter, water and juice. Add the cake mix, pudding and orange zest. Blend for 30 seconds, scrape the sides of the bowl, and blend again for 2 minutes.

    Cut the cranberries in half, add them and mix well with a spatula.

    Pour the mixture into a mold and bake for 1 hour or until you can insert a toothpick in the center and it comes out clean.

    Decorate with powdered sugar, if desired.

    You can use a rectangular pan and cut the cake into slices like bread, and serve warm for breakfast.

    You can substitute the cranberries for strawberries or raspberries.

    You can also substitute the orange zest and juice zest for lemon zest and juice.
