Cranberry and Date Granola

Granola is one of my favorite sweet snacks or wholesome desserts. The taste is delicious, the crunchiness relaxing and it’s also extremely easy to carry around or add to anything you’re eating, such as fruit salad or yogurt. Do I need to say more? For those who simply love making things from scratch, here’s an incredibly tasty granola recipe a friend shared with me a few weeks ago. I think this would make a perfect holiday gift if you put it in cute labeled, or decorated, jars. I know I would love to get something like this for Christmas. Wouldn’t you?

Ingredients

  • 2 tablespoons coconut oil
  • 2 tablespoons raw honey
  • 1/2 teaspoon salt
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 2 cups rolled oats
  • 1/4 cup pumpkin seeds
  • 1 egg white
  • 1/2 cup chopped dates
  • 1/2 cup unsweetened dried cranberries
  • 1/4 cup dried pineapple, chopped
  • 1/4 cup goji berries

Directions

    Preheat the oven to 300 °F.

    Heat the coconut oil, raw honey, and salt in a small pan over low heat until melted and warm.

    Mix the almonds, cashews, oats and pumpkin seeds in a large bowl.

    Add the honey and coconut oil mixture, and stir well to make sure all the ingredients are thoroughly covered.

    Beat the egg white until frothy, and mix into the granola.

    Line a 13 x 9 inch baking pan with parchment paper and spread out the granola.

    Bake for 25-30 minutes, stirring once halfway.

    When ready, add the dates, cranberries, pineapple and goji berries, and let it cool.

    Transfer to gift jars and keep at room temperature for up to a week.

Expert Tips

    This granola doesn’t have any added sugar, but if you want to lower the natural sugar content even further, skip the dried fruits.

    Use any kind of nuts or dried fruits you want. You can also add dried coconut flakes for an extra layer of flavor, or use olive oil instead of coconut oil.
