This congrí (rice and beans) recipe is perfect to stuff your Thanksgiving turkey and give it a different flavor. It’s very easy to make and the result is delicious. I added pieces of Spanish chorizo and ham to give a unique flavor to this stuffing that everyone will love and enjoy. Try this delicious Cuban recipe, this time with a Puertorican touch.

Ingredients

  • 1 tablespoon olive oil
  • 1 chorizo, skin removed and crumbled
  • 1 cup ham for cooking, diced
  • 1 medium onion, chopped
  • 3 garlic cloves, chopped
  • 2 cups (15.5 oz) black beans
  • 1 1/2 cup white rice, long or medium grain
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced yellow bell pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon sweet paprika
  • Salt, to taste

Directions

    In a medium bowl, add olive oil and sauté chorizo, add ham, onion, garlic and sauté while stirring.

    Add beans and rice, and cook for 40 minutes on medium-low heat with lid on.

    Once the rice is ready, let cool completely before using it to stuff the turkey just before roasting it, or serve it on the side.

    Serve and enjoy!

Expert Tips

  • tip 1
    Never use hot rice or any other hot stuffing. Cook it the night before and refrigerate over night so it can be ready to stuff the turkey the following day.
