Natalia Carter One of my favorite snacks while I was in college were Colombian almojábanas, delicious bread made with cheese that, when made well, are heaven. They are generally served with a hot or cold drink like sodas, hot chocolate or coffee. Preparing them is an easy process and they continue to be one of my go-to options when it comes time to make Colombian food.

Ingredients

  • 1 cup corn flour
  • 1 lb fresh queso fresco
  • 1 teaspoon of salt
  • 1 teaspoon of melted butter
  • 1 teaspoon of baking powder
  • 2 whipped eggs
  • 1/2 cup milk (optional)

Directions

    Preheat the oven to 400°F.

    Mix all the ingredients and knead well.

    Create balls, approximately 12. Place the balls on a greased baking dish and bake for about half an hour or until they've grown and started to brown. Serve hot.

    You can use cottage or cuajada cheese instead.
