Ingredients

Marinade

  • 1 cup orange juice
  • 1/4 cup soy sauce
  • 2 tablespoons lemon juice
  • 2 tablespoons dry sherry
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons olive oil
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper sauce
  • 1/2 teaspoon salt
  • 2 cloves garlic, finely chopped

Chicken

  • 4 boneless skinless chicken breasts
  • 4 skinless chicken drumsticks
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh chives

    In small bowl, mix all Marinade ingredients. Place all chicken pieces in 1-gallon resealable food-storage plastic bag; add marinade. Seal bag; refrigerate at least 4 hours or overnight.

    Heat oven to 350°F. Remove chicken pieces from marinade; reserve marinade. In 12-inch skillet, heat 2 tablespoons olive oil over medium-high heat. Cook chicken in oil 6 minutes, turning once halfway through.

    Spray 13x9-inch (3-quart) glass baking dish with cooking spray; place chicken in baking dish. Pour reserved marinade over chicken. Cover; bake 20 minutes. Uncover; bake 10 to 15 minutes longer or until juice of chicken is clear when center of thickest part is cut (at least 165°F); sprinkle with chives.
