Chorizo Chilaquiles

Chilaquiles are delicious, easy to make and perfect any time of day whether it be for breakfast, lunch or dinner. What I love the most about chilaquiles is that they can be made in different ways. You may have already prepared chilaquiles with chicken or shredded red meat, but have you ever tried chorizo chilaquiles? Red chilaquiles with chorizo combines two of my favorite breakfast dishes and it’s a unique and delicious recipe. I love adding one last touch to these chilaquiles to make them irresistible and for that I top them with a fried egg.

Ingredients

  • 2 cups vegetable oil for frying
  • 24 corn tortillas, cut into triangles
  • 1 lb mexican chorizo
  • 1/2 red onion, finely chopped
  • 3 Roma tomatoes, finely chopped
  • 1 fresh jalapeño, seeds removed and finely chopped
  • 2 cups asadero cheese, grated
  • 1 can (14 oz) red enchilada sauce
  • Crema mexicana or sour cream, to taste
  • Hot sauce, to taste (optional)

Directions

    In a deep frying pan, heat vegetable oil on medium-high heat.

    Fry the tortillas in batches of 2 to 3 until completely golden. Remove the tortilla chips from the oil and place on a plate with paper towels to remove excess oil. Season with salt.

    In a nonstick frying pan, sauté the chorizo with onions, tomato, and chopped jalapeño until thoroughly cooked. Remove from heat.

    Preheat oven to a 350°F.

    Arrange 1/2 of tortilla crisps on a greased baking pan. Add 1/2 of chorizo and sprinkle with 1/2 of grated cheese. Repeat with another layer of tortilla chips and chorizo. Cover in enchilada sauce and sprinkle with remaining cheese.

    Bake at 350°F for 30 minutes or until the cheese starts to melt. Remove from oven. To serve, top with a dollop of crema Mexicana or sour cream and your favorite hot sauce. Enjoy!

    To save time in the kitchen, use a bag tortilla chips or make the chips ahead of time.
