Ingredients

For the cake

  • 1 box Betty Crocker™ Super Moist™ Chocolate Fudge Cake Mix (plus ingredients listed on the package)
  • 4 cups vanilla ice cream
  • 1 can Betty Crocker™ chocolate decorating cupcake icing

For the almond sauce

  • 1 cup corn syrup
  • 1 cup brown sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla
  • 2 cups sliced almonds

Directions

    For the cake: Bake cake as directed in package instructions, making 2, 9-inch cakes.

    Cool completely, wrap in plastic wrap and place in fridge.

    Line a 9 inch cake pan with plastic wrap, spoon and evenly spread ice cream. Cover with plastic wrap and return to freezer, freeze until solid, about 1 hour.

    When ready to assemble, retrieve ice cream cake pan from freezer. On serving plate, place one cake layer side down, place ice cream layer over cake and top with remaining cake layer. Return to freezer to set for 20 minutes, ice with chocolate icing and return to freezer until ready to serve.

    Drizzle with candied almond sauce before serving.

    For the almond sauce: In a medium sauce pan bring corn syrup, brown sugar, and milk to a slow boil. Stir to dissolve brown sugar. Boil for 3 minutes, remove from heat and stir in vanilla and sliced almonds.

    Serve warm over slices of ice cream cake.
