Chicken Taco Melts

One of our favorite foods has got to be pizza. I always keep a can or two of Pillsbury™ Refrigerated Thin Pizza Crust in case of mid-week dinner emergencies, when I am running out of time or whenever we feel like a tasty pizza for dinner. This time, I put my thinking cap on, used some leftover shredded chicken and tomatoes and created these amazing chicken taco melts. With the help of taco seasoning and some cheddar cheese, dinner was served on time. My family was pleasantly surprised and asked for seconds!

Ingredients

  • 1 tablespoon grape seed oil
  • 1 cup cooked chicken breast, shredded
  • 1 cup canned diced tomato, drained
  • 1 tablespoon taco seasoning
  • 2 tablespoons flour
  • 1 can (11 oz) refrigerated Pillsbury™ Thin Crust Pizza Crust
  • 3/4 cup cheddar cheese, shredded
  • 1 egg, beaten

Directions

    Preheat oven to 400° F.

    Heat oil in a large skillet over medium heat. Add chicken and tomato, stir and cook for 5 minutes. Stir in taco seasoning and heat for 4 minutes. Remove from heat and set aside.

    Line a large baking sheet with parchment paper.

    Sprinkle flour over a work surface and extend pizza dough. Cut out 12 dough triangles. Spoon on chicken mixture in the center of 6 triangles and sprinkle with cheddar cheese. Cover each triangle with the remaining cut-out dough triangles. Seal on all sides using a fork. Arrange hand pies on lined baking sheet and brush with beaten egg.

    Bake for 10 minutes or until dough is golden.
