With summer quickly approaching, we tend to prepare refreshing dishes to avoid the oven as most we can. In general, BBQs and salads are the preference when it comes to picking a meal. I love taking advantage of season vegetables and visiting produce markets to purchase the ingredients I need for my future recipes. This time I opted for a light salad, it's fresh and very easy to prepare: chicken salad with spinach and homemade dressing.

Ingredients

Dressing:

  • 1 cup of mayonnaise
  • 1/2 cup of fresh lemon juice
  • 1 tablespoon of cumin, to taste

Salad:

  • 1 cup of toasted almonds
  • 2 cooked chicken breasts, cut into small pieces
  • 4 celery sticks, thinly chopped
  • 4 cups of spinach
  • 1 can (14.5-oz) Muir Glen™ organic whole peeled tomatoes
  • 3 boiled eggs, cut into fours
  • 3 chives, thinly chopped

Directions

    Mix the ingredients for the dressing and refrigerate.

    Mix the veggies with the tomatoes in a large, deep bowl. Serve and add the chicken and eggs. Add the dressing.

    To keep it vegetarian just replace the chicken with more veggies.
