Chicken Nachos

We often find ourselves eating when we're anxious or very emotional about something that's about to happen. The best example of this is when we go to the movies and buy the family-sized popcorn, only to find an empty bag halfway through the movie. This happens to me when I'm enjoying a particularly exciting soccer match; I usually end up munching on chips and salsa. Now that we're preparing to enjoy soccer season, I've started thinking about the dishes that will get me through the anxiety and excitement that I feel with each match. One of my favorite snacks is this chicken nachos recipe; it's easy to prepare and you can add your favorite ingredients to it.

Ingredients

  • A bag of nacho tortilla chips
  • 2 chicken breasts, cooked and diced
  • 1/2 cup mozzarella
  • 1/2 cup cheddar
  • 1/2 cup guacamole
  • 1 can Muir Glen™ diced tomatoes
  • 1 small can black beans
  • 1/2 cup sour cream
  • 1/2 cup jalapeños (optional)

Directions

    Preheat the oven to 400°F.

    Place the nachos on a large baking dish.

    Add the pieces of chicken, covering evenly.

    Distribute the tomatoes, cheeses, beans and jalapeños. Repeat if you like.

    Bake for about 10 minutes and/or until the cheese has melted.

    Remove from the oven and add the sour cream and guacamole.

    You can add diced tomatoes to the guacamole and/or use steak instead of chicken.
