Chicken Fajitas

Who doesn’t like fajitas? Roasted meat with bubbling onions and peppers fresh off the grill is a delicacy. The good thing about this recipe is that you can use different types of meat and you don’t have to fire up the grill. Today, I’m using a handful of ingredients to make delicious chicken fajitas on the stove, in only 30 minutes. Can you believe it? Be sure to have some tortillas, salsa, rice and beans on hand for a complete meal that will delight both kids and adults alike. And because we’re using sweet bell peppers in this Mexican dish, those that like a little more kick can add salsa or a little Serrano pepper or jalapeño to the chicken to take it up a notch. Enjoy!

Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 lb chicken breast, sliced into long, thin strips
  • Garlic salt, to taste
  • Salt and pepper, to taste
  • 1 red bell pepper, washed, seeded and sliced
  • 1 green bell pepper, washed, seeded and sliced
  • 1 yellow bell pepper, washed, seeded and sliced
  • 2 tablespoons water or chicken consommé

Directions

    Heat the oil in a large saucepan.

    Meanwhile, season the sliced chicken with the garlic salt, salt and pepper. Add to the hot oil and fry until the meat is no longer pink.

    Add the onion and let cook for 3-4 minutes.

    Add the bell peppers and the water or consommé. Lower the temperature to medium-high, cover and let cook for approximately 12 minutes. Stir occasionally to evenly cook all ingredients. Taste to check the seasoning, and add more salt if necessary.

    Serve hot in flour tortillas with rice and beans.

    If you have leftover chicken, simply shred or cut it in long, thin slices and use it in place of the fresh chicken.

    If you don’t have flour tortillas, you can use corn tortillas or tostadas.
