Chicken and Grape Bruschetta

This recipe, a variation of traditional bruschetta, uses grapes. Grapes are a delicious fruit and the perfect addition to salty dishes. These bruschetta are the perfect appetizer for a family reunion or friendly gathering. If you like grapes as much as I do, then I hope you enjoy this recipe!

Ingredients

  • 3 garlic cloves, chopped
  • 1/2 cup of extra virgin olive oil
  • 1/4 teaspoon of salt
  • 1 baguette
  • 8 oz chicken breast, shredded or cut into strips
  • 12 oz shredded Monterey jack cheese
  • 1 1/2 cup seedless grapes, any color you like and cut in half
  • 1 tablespoon of chives, chopped
  • Pepper

    Preheat the oven (broil) to 550°F.

    Mix the garlic, olive oil and salt in a small bowl.

    Cut the baguette into slices and place them in a baking tray.

    Use a brush to moisten the slices of bread with the oil and garlic mixture. Bake the bread for 1-2 minutes on each side or until they've browned. The bread should be toasted on the outside, but soft in the middle.

    Place 1 spoonful of chicken and 3 grape halves on each slice of bread. Then, cover each slice with two tablespoons of cheese.

    Place the tray in the oven again for 2-3 minutes or until the cheese has melted.

    Serve the bruschetta on a dish and sprinkle with chives and pepper.
