At home I make good use of refrigerated Pillsbury™ dough, since it's such a versatile ingredient. One of my favorite recipes calls for Pillsbury™ biscuit dough to make bombas that can be filled with shredded chicken, picadillo, ham, chocolate, or other ingredients you like. The possibilities are endless! This time, I've prepared a very simple version of the bomba, filled with shredded cheese. I can tell you, the bombas were a total hit! There were no leftovers, so be sure to make enough for the whole crowd. Buen provecho!

Ingredients

  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Original Biscuits (8 Count)
  • 1 1/2 cups shredded Monterey Jack cheese with jalapeño peppers
  • 2-3 cups vegetable oil, to fry

Directions

    Open the package of biscuits, carefully separate the layers and cut the biscuits in half so that you have 16 pieces of dough.

    Put 1 tablespoon of shredded cheese in the middle of each piece of dough. Gently seal the dough around the cheese to form balls. This step is important to prevent the cheese from melting out while frying. Repeat until all the bombas have been made.

    In a small, deep frying pan, heat the oil over medium heat until it reaches 350 °F. It’s important to maintain the oil at this temperature in order to fully cook the bombas.

    Fry the bombas in batches for 3-4 minutes, or until they reach a deep, golden brown. Remove from oil and transfer to absorbent paper towels. Let rest for 5 minutes before serving.

Expert Tips

    Maintaining the temperature of the cooking oil at a steady 350 ºF throughout the frying process is important. If at any point the oil gets too hot, remove from heat until the temperature has lowered.

    The amount of oil used will depend on the size of the frying pan you're cooking with, but there should be enough for all the bombas to float.
