I remember my mom used to always make Cauliflower Rice Cakes when I was little. We used to have vegetarian dishes two or three times a week, and these cakes were our favorites. Now that cauliflower “rice” has gotten popular, it’s even easier to make these cakes. All you need is to mix it with egg and spices. They’re easy to make, simple and delicious. I suggest you serve them with pico de gallo, sauce or guacamole. Add a salad and beans and voila—a full meal.

Ingredients

  • 1 medium-sized cauliflower, in florets
  • 3 eggs
  • 2 garlic cloves, finely chopped
  • 3/4 teaspoon salt
  • 1/3 cup Progresso™ Panko Italian style crispy bread crumbs
  • 1/2 cup oil

    Put a layer of florets in the food processor and pulse 18-20 times until you make the “rice”. Repeat with the entire cauliflower. Don’t put all the florets in the processor at the same time because the sizes might be uneven. Usually, you have to make it in 3 to 4 batches.

    Put the cauliflower “rice” in a glass jar and then put it in the microwave for 3 minutes. Let it cool down for 5 minutes.

    Mix the cauliflower, eggs, garlic, salt and bread crumbs until you get a smooth mixture.

    Heat up the oil in a big pan.

    Make a cake with a 2” diameter. The cake will feel a bit loose, but it will get a shape when it’s fried. Put it carefully in the oil. Repeat until you’ve filled the pan, leaving at least one each between cakes. Fry for 2-3 minutes per side or until they get golden brown. Remove from the oil and put them in a dish covered with paper towels to absorb oil. Repeat until you’ve fried all the cakes.

    Serve with sauce or pico de gallo.

Expert Tips

  • tip 1
    Save some time buying clean cauliflower chopped into florets. Look for them in the fruits and vegetables aisle in your supermarket, with the salads.
  • tip 2
    If you like spicy food, you can add cayenne pepper, chipotle powder or finely chopped serrano pepper.
