Ingredients

  • 1 tsp vegetable oil
  • 1/4 large sweet onion (Bermuda, Maui, Spanish or Vidalia), sliced
  • 3 medium sweet potatoes, peeled, sliced (3 1/2 cups)
  • 2 tbsp packed brown sugar
  • 1/2 tsp jerk seasoning (dry)
  • 1 tbsp chopped fresh parsley

Directions

    In 10-inch nonstick skillet, heat oil over medium heat. Add onion and sweet potatoes; cook about 5 min, stirring occasionally, until light brown. Reduce heat to low. Cover; cook 10-12 min, stirring occasionally, until potatoes are tender.

    Stir in brown sugar and jerk seasoning. Cook uncovered about 3 min, stirring occasionally, until glazed. Sprinkle with parsley.
