Do you like sweet popcorn? Did you know that caramel popcorn is really easy to make? All you need is a pay special attention to the sauce because if you don't watch it carefully, it could burn and smoke up the house – fire alarm and all! Now that we have that clear, the instructions are very simple: first make the popcorn as usual, the same ones you prepare to watch a movie, then just add the melted butter and salt. In this case, we're going to take it up a notch by making a caramel sauce with brown sugar, butter and corn syrup. You'll see that this recipe is easy and delicious; the sauce has a hint of salt that gives the popcorn a great contrast. You can make it in the oven, but I like using the same pot I made the popcorn in, this way I have better control of the sauce as it's cooking. You can use whatever method you like, just make sure you're always paying attention so that it doesn’t burn.

Ingredients

  • 2/3 cup of popcorn kernels
  • 1/4 cup of vegetable oil

Sauce:

  • 3/4 cup brown sugar
  • 1/4 cup butter
  • 1/4 cup corn syrup
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of baking soda

Directions

    Pour the oil and corn into a pot with a lid. Cook over medium-high heat with the lid on. In a few minutes you’ll begin hearing the corn pop and become popcorn. When the popping stops, the popcorn is ready. Be careful not to burn the kernels. Turn off the heat, remove the lid and transfer to a large bowl. Set aside.

    Sauce: Use the same pot to prepare the caramel. Melt the sugar, butter, corn syrup and salt over medium heat. When everything is melted add the baking soda and all of the popcorn, stir constantly from top to bottom so each piece of popcorn is covered in caramel.

    You can cook them until you have your desired color. I like it nice a browned, but if you like it a little lighter you can remove it when it’s that shade. Pour the popcorn into a tin lined with parchment paper and let cool.

    When it's cooled, break into clusters or separate entirely. You can put them away for a week in tins with lids, though I doubt they'll last that long.

    Use brown sugar in the color you want. The darker the sugar, the darker the popcorn will be

    You can add a teaspoon of cinnamon powder before cooking. It’s delicious!
