Candied Apples with Cinnamon and Grand Marnier

I just got home from my weekly trip to the grocery store and I'm completely in love with the variety of apples I've seen. Maybe that’s why this fruit is also called the queen of fall. I got the idea to prepare a recipe with baked apples and I must say, I’m almost positive you'll love it them. I like to include all kinds of apples in our daily diet. There is a great variety of apples at the super market, so you have plenty to chose from. They combine perfectly with most other ingredients; it also helps with digestion and is rich in fiber. It can be enjoyed for breakfast, as a snack and even for lunch. The most common apples are the Gala, the Red Delicious, the Golden, Fuji, Granny Smith, Roma and McIntosh. The recipe I'm going to prepare today is made with Roma apples. They're lightly juicy with soft skin and sweet pulp. They’re great for baking. These apples are round and small. They’re perfect for baking with brown sugar, cinnamon with a touch of Gran Marnier and crushed Cinnamon Toast Crunch™ cereal. Ingredients

  • 5 Roma apples
  • 1 cup water
  • Juice from 1 lemon
  • 3 tablespoons butter
  • 5 to 6 drops of red food coloring
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup Grand Marnier
  • 1/2 cup Cinnamon Toast Crunch™ cereal, chopped

    Heat the oven to 350°F.

    Use a potato peeler to remove the skin from each apple, but keep the stem intact. Mix the water with the lemon juice. Place the apples in a deep container and sprinkle on the lemon water to prevent the apples from oxidizing while you prepare the rest of the ingredients. Place the apples on a paper towel to absorb the excess water.

    Add the butter to a pan on low heat. When it melts, add the food coloring so they mix. Add the apples and sauté with circular motions. Continue doing this until they've browned, approximately 10 minutes.

    Mix the sugar and cinnamon in a separate container.

    After 10 minutes or once they’ve browned, add the sugar and cinnamon mixture, continue sautéing on each side. Cook for 5 more minutes. Remove the pan from the heat and add the Gran Marnier carefully and immediately flambé. Place on the stove to allow the apples to absorb some of the alcohol.

    Place the apples in a baking dish with the liquid, sprinkle on pieces of Cinnamon Toast Crunch™ and bake at 350°F for 30 minutes.

    Serve hot or cold, as dessert, with vanilla ice cream.

    Buy firm apples that aren't bruised.

    If you don't use all the apples, keep the well sealed and refrigerated for no more than 3 days. Heat in the microwave or in the oven to keep them juicy or soft sugar and cinnamon molasses.
