Caesar salad is very simple and versatile, and also very delicious. It's one of my favorite weeknight dinners. I can make it quickly and jazz it up with some chicken skewers or smoked salmon.

Ingredients

  • 1 head romaine lettuce, washed and chopped
  • 4 (4-oz) boneless chicken breasts
  • 1/2 cup grated parmesan cheese, to taste
  • 1 cup croutons
  • 1/2 cup Caesar salad dressing
  • Salt and pepper to taste
  • Small skewers
  • Lime slices, optional

Directions

    Wash and dry the lettuce, chop it as you like. Serve on individual plates.

    Cut the chicken breast into small cubes and skewer them. Season with salt and pepper to taste.

    Heat up a griddle or a grill and spray it with vegetable oil. Cook the chicken skewers for approximately 4 minutes on each side, or until they're brown (the cooking time will depend on the size of the pieces of chicken).

    Grate the cheese with a vegetable slicer, or use grated cheese.

    Add croutons, cheese, and dressing to each plate. Serve with the chicken skewers.

    You can substitute fish fillet or pork loin for the chicken.
