Butifarra Sausage with Mongetes

My family and I recently tried butifarras con mongetes, a hearty dish from Catalonia, Spain made with pork sausage and white beans. Because we loved the flavor, I decided to recreate it at home with ingredients I found at my local supermarket. If butifarra (a type of Spanish sausage) is not available at your local market, pork sausage is the best substitution for it in this recipe. Grill, bake or pan fry your butifarra and serve with mongetes or your favorite white bean!

Ingredients

  • 2 cups dried white beans
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 2 5-lb (each) butifarras (or pork sausages)
  • 1/4 cup fresh parsley, chopped

Directions

    Rinse and soak white beans overnight.

    Drain beans. In a medium stockpot, combine beans, salt, and enough water to cover them. Boil over medium-high heat. Then lower heat and simmer for approximately 45 minutes or until beans are tender. Drain, drizzle with olive oil and stir to combine. Set aside.

    Grill butifarras on a grill pan over medium heat for 12 minutes on each side, or until fully cooked.

    Transfer white beans to a serving plate next to butifarras. Sprinkle with chopped parsley and serve.
