Brown Butter Brussels Sprouts & Delicata Squash with apples

One of the most popular winter ingredients is pumpkin. We can find it in drinks, desserts and sides. There also exist different types, like squash, also common during this time of year. They can be prepared in the oven, steamed and even in the microwave. One of my favorite dishes with this ingredient is served with Brussels sprouts and apples, the perfect seasonal side. To save time, I’ve decided to use baby Brussels sprouts and carrots.

Ingredients

  • 1 small squash cut into pieces
  • frozen baby cut carrots 32 oz
  • frozen baby Brussels sprouts & butter sauce 10 oz
  • 1 apple cut into pieces about 1 inch
  • 2 medium shallots, thinly sliced
  • 1 peeled and sliced onion (optional)
  • 2 tablespoons melted butter
  • 2 tablespoons maple syrup
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Directions

    Preheat the oven to 350°F.

    Prepare the Brussels sprouts according to their instructions and save the juices.

    Mix the sprouts, pumpkin, apples, shallots and onion in a large bowl. Add the butter, syrup and salt and pepper. Stir well.

    Line a baking dish with parchment paper and spread out the mixture. Bake for close to half and hour, mixing from time to time.

    Add the cheese and let cook. Take them out of the oven when they’re red and the cheese has melted. Serve.
