The parmesan cheese together with the panko makes this fish dish a real tasty treat! It’s crunchy yet smooth. I like it a lot, especially since frying it is not necessary. Just bake it and in 30 minutes, your meal’s ready. Serve with vegetables to make it even better.

Ingredients

  • 4 mahi-mahi or grouper fillets
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon paprika
  • 2 tablespoons mayonnaise
  • Salt and pepper to taste
  • Coconut or vegetable cooking spray

Directions

    Preheat the oven to 450° F.

    You will need a baking tray covered in aluminum foil. Add a little bit of spay and set aside.

    Mix the panko with the parmesan cheese and paprika, and set it aside.

    Season the fish to taste with salt and pepper. Spread a little bit of mayonnaise on both sides of the fish fillet. Then, dip them in the panko mix.

    Place the fish on the tray and bake for 15 to 20 minutes. Serve with vegetables or mashed potatoes and lemon slices.
