Beer-Basted Pork Loin

The New Year’s eve dinner isn’t just the last meal of the year; it’s also the most anticipated. Due to the busy nature of that day, there’s really nothing better than finding simple and delicious recipes to welcome the new year. Generally, we get together with family in the afternoon and everyone brings food and drinks to share. This year, my recipe consists of beer basted pork loin. It goes really well with other dishes such as salad, purees and rice. Its preparation is ideal for holiday parties because I can mingle while it finishes cooking.

Ingredients

  • 2 lbs boneless pork loin, seasoned
  • 1/2 tablespoon kosher salt
  • 1/2 tablespoon of paprika
  • 1/2 teaspoon of black pepper
  • 1/2 tablespoon of olive oil
  • 4 garlic cloves, finely chopped
  • 1 beer, your choice

Directions

    Preheat the oven to 350°F.

    Right before preparing rinse off the excess seasoning. Sprinkle the kosher salt, paprika and black pepper over the pork loin.

    Add the garlic and bathe the loin in half the beer in a container. Move it to the oven and let cook for half an hour, check on it to make sure it doesn’t dry out. After this half an hour, add the rest of the beer and let cook for another 15 minutes.

    Once it’s ready, serve on a long plate and let sit for ten minutes before carving into slices.

    Season the loin a day in advance. You can use vegetable oil, salt, ground pepper, paprika, rosemary (optional), and chopped garlic. Let sit in a sealed container over night.
