Beef Steaks with Tomatoes

Silvia Martínez This is one of the first recipes I learned when I started cooking. When my mom and grandmother began teaching me how to cook, I already had a list of two or three recipes that I wanted to learn right away, and this one was among them. Steaks with tomatoes are very easy to make and will fill your kitchen with a delicious aroma that will make anyone’s mouth water upon entering your home. You only need five ingredients. Your ingredients should be as fresh as possible, particularly the meat. The chipotle peppers are especially important. As of late, these delicious peppers have given a new twist to Mexican cuisine in the United States. Their spicy and smoky flavor gives any dish a distinctive taste, and this one is no exception.

Ingredients

  • 3 tablespoons vegetable oil
  • 4 beef steaks, well flattened
  • 1 medium white onion
  • 12 medium green tomatillos
  • 1 small can (7 oz) chipotle peppers in adobo sauce
  • Salt to taste

Directions

    Add the three tablespoons of oil to a medium pot over high heat. When the oil is very hot, carefully add the beef steaks, one by one. Let them cook for a couple of minutes on each side.

    While the steaks are cooking, finely chop the onion. Peel, wash and chop up the tomatillos. Open the can of chipotle peppers and take a couple of peppers (you can either chop them up, or leave them whole; it’s up to you).

    Add the onion, tomatillos and chipotle peppers to the steaks, and season with salt to taste. Set the heat to low, cover the pot and let it cook for 20 minutes or until the steaks are cooked and tender. Check the pot a couple of times while it’s cooking and stir the meat and vegetables so everything combines well.

    Serve hot.

    You may cut the steaks into fajita-sized pieces to give them a different look.

    Make sure there are no lemons among the tomatillos. I once threw a lemon in my stew by accident and it obviously made my dish taste bitter.
