Banana and Walnut Muffins

Having nutritious snack options that can be quickly prepared is always a good idea. Sometimes I just don't have the time to prepare an actual meal, which causes me to eat more foods, usually not very wholesome. To combat this, I like to have products in my refrigerator to prepare a smoothie or a light snack, like fruits, vegetables, yogurt, milk and more. Another great idea is to prepare baked whole grain muffins, like the ones I'm sharing with you today. They not only satisfy, but also are good for you. This recipe uses bananas, apples, and walnut. It's also low in fat and sugar. Bake them, refrigerate them and snack on a couple when you leave the house.

Ingredients

  • 2 tablespoons butter at room temperature
  • 1 medium apple, grated with rind and all
  • 1 cup sugar
  • 1 yogurt (6 oz) Yoplait® Original vanilla yogurt
  • 3 eggs
  • 3 cups flour
  • 1/4 teaspoon salt
  • 2 teaspoons of baking soda
  • 4 mashed bananas
  • 1/2 cup walnuts chopped

Directions

    Preheat the oven to 350°F.

    Combine the butter, apples, sugar, yogurt and egg in a large bowl. Mix until everything is well combined.

    In another small bowl, mix the flour, salt and baking soda. Add to the mixture of butter and eggs.

    Add the mashed banana and walnuts. Stir in folding motions.

    Sprinkle the cupcake molds with cookie spray and add 1/3 cup of the mixture to each mold.

    Bake for 15-17 minutes or until they've browned. They’re ready when you’re able to stick a toothpick in the middle of a muffin and have it come out clean.

    Let sit for 5 minutes, remove from the mold and let cool another 5 minutes.

    You can use cupcake mold liners instead of the cooking spray.

    These muffins freeze well. Make double the amount and enjoy them for weeks.
