I love zucchini and especially baked zucchini fries. These fries are prepared with a delicious mix of herbs, grated cheese, and seasoning, which makes them irresistible. You can prepare them in minutes and they’re perfect as a light lunch, to add to your children’s lunchboxes or to serve them at your next party with a delicious yogurt and oregano dip. My children love them and I serve them as an alternative to regular fries. I hope you try these delicious baked zucchini fries and that your family loves it as much as mine does.

Ingredients

  • 2 zucchinis, chopped lengthwise
  • 1 egg
  • 1/4 cup bread crumbs
  • 2 tablespoons Parmesan cheese
  • 1 teaspoon dry basil
  • 1 pinch of salt and pepper to taste
  • 1/2 cup Yoplait® Greek yogurt
  • 1-2 tablespoons Sriracha (depending on how spicy you want them)
  • Juice of 1/2 lemon
  • 1 teaspoon oregano

Directions

    Preheat the oven to 350°F. Clean the zucchinis and trim off the ends.

    In a bowl beat the egg. In another bowl, mix the bread crumbs, parmesan cheese, basil, salt, and pepper.

    Using a fork, put the zucchini sticks in the mixture of egg and then dip them in the bread crumbs.

    Transfer to a baking tray coated with cooking spray.

    Bake for 15 minutes. Remove from the oven and then turn them over carefully. Bake at 350°F for 5 -10 more minutes or until they’re golden brown.

    In a bowl, mix the Greek yogurt, Sriracha sauce, lemon, oregano and salt to taste. Serve this dip with the zucchini fries.

Expert Tips

    You can also use tomato sauce instead of Sriracha, if you don’t like spicy dips.
