I absolutely love Hass avocados. You can distinguish them from other kinds as they have a deep dark green color, rough skin and are small compared to other kinds; this ingredient is versatile and can be suited for salty or sweet foods.

Ingredients

  • 2 fresh farm eggs
  • 1 Hass avocado
  • 1/2 teaspoon canola oil
  • Sea salt & pepper (to taste)
  • Red salsa, toast and a cilantro leave or sprig to garnish, if desired

Directions

    Heat oil in skillet on the stove over low heat; cut avocado in half lengthwise, turn both sides of the avocado to open and take pit out carefully; proceed to peel; cut a small portion of base or bottom to make the avocado even and stable.

    Place avocado halves on skillet, crack an egg inside each avocado half, lower the flame and cover for few minutes until egg cooks through.

    Finish up with salt and pepper, serve in nice plate, garnish with favorite salsa, decorate with a cilantro sprig or leave; add toast on the side.

    This recipe serves two people. If you are cooking for four or more, just add more eggs and avocados to the recipe and use a bigger frying pan if doing all at the same time.
