I have recently discovered Mexican molletes and become fascinated by them. This delicious dish is made with rolls cut in half, adding refried beans, cheese, and sauce. They’re easy to make and you can serve them for breakfast, send them in your kids’ lunchboxes or as a light snack. The basic molletes are usually served with sauce, but you can be creative and use different ingredients.

Ingredients

  • 4 rolls
  • 1 can refried black beans
  • 1 pack mozzarella, Oaxaca or manchego cheese
  • Pico de gallo
  • 3 avocados
  • 2 zucchinis

Directions

    Chop the zucchini lengthwise and lay it on a baking tray. Drizzle with olive oil and season with salt and pepper. Bake for 10 minutes until the zucchini is golden brown.

    Cut the rolls in half. Spread refried beans on each slice.

    Place the rolls on a baking tray. Sprinkle with some cheese.

    Bake in the oven at 350°F for 15 minutes or until the cheese has melted.

    Once the rolls are ready, add the zucchini and avocado. Serve immediately.

    You can also add slices of jalapeño if you want them spicy.
