Martha Salas Get-togethers featuring party bites are all the rage. They're a great opportunity to shine and enjoy preparing dishes that everyone will love. I particularly like taking care of my guests and serving them delicious, varied bite-sized treats. Wrapped asparagus, among others, are a great option and easy to prepare. In this time of the year, the spring, where the freshness and warmth of the season reign, I invite you to prepare with me fresh asparagus wrapped in Serrano ham and a soft, spongy dough. Serve them with a mustard-based sauce with lime and curly parsley. Have fun wrapping asparagus—green and white ones—and pay tribute to this marvelous season of the year!

Ingredients

  • 12 fresh asparagus
  • 4 cups water
  • 1/4 cup unsalted butter, melted
  • 1/4 cup Progresso™ bread crumbs
  • 6 slices of Serrano ham, thin
  • 1 can (8 oz) refrigerated Pillsbury™ Original Crescent Rolls (8 Count)

For the sauce

  • 3 tablespoons mustard
  • 1 tablespoon lime juice
  • 2 tablespoons parsley, finely chopped

Directions

  •
    1
Preheat oven to 350°F. Cover a baking tray with wax paper.
  •
    2
Wash the asparagus in fresh water and carefully cut 1/2 inch from the bottom.
  •
    3
Put the water in a large pot over medium high heat and bring it to a boil. Cook the asparagus for three minutes. Drain them and immediately put them in a container with water and ice, so they cool off and remain firm.
  •
    4
Cut the Serrano ham slices in half, lengthwise.
  •
    5
With a pastry brush, cover the asparagus with butter, roll them in bread crumbs and wrap them in Serrano ham, without covering the tips.
  •
    6
Open the container of Pillsbury® crescent dough following the instructions. Cut each dough triangle into two pieces. Carefully wrap each asparagus with the dough, covering the Serrano ham.
  •
    7
Arrange the asparagus uniformly, two inches apart from each other.
  •
    8
Use a pastry brush to paint them with butter. Bake them for 12 minutes or until they’re slightly golden.
  •
    9
While the asparagus bake, prepare the sauce. In a medium bowl, mix all the ingredients. Set aside.
  •
    10
When the asparagus are ready, remove them from the oven, place on a serving tray and decorate with the sauce.

Expert Tips

  • tip 1
You can use white and green asparagus.
  • tip 2
For al dente asparagus, don't leave them in boiling water for more than 3 minutes.
  • tip 3
Take the container of Pillsbury™ crescent dough out of the fridge when you're ready to use it. Otherwise, the dough will get too soft and you'll have a hard time separating the triangles to cut them.
