This asparagus salad is very easy and quick to make and you only need 5 ingredients. It's the perfect way to give your meal a fresh touch. It's made with asparagus, corn, queso fresco, cooked egg and a lime dressing. I love quick and simple salads; I prepare them at home daily. This salad is the perfect side for seafood or chicken dishes.

Ingredients

  • 1 asparagus bunch
  • 1 package (9 oz) frozen corn, defrosted and strained
  • 1/2 cup of queso fresco, grated
  • Juice from one lime
  • 2 boiled eggs, peeled and sliced

Directions

    Cut the asparagus into small pieces. Cook in boiling water with salt for a few minutes and move them to freezing water to stop the cooking process.

    Mix with the rest of the ingredients and cool until it's ready to serve.

    You can also turn it into a complete salad by serving on top of lettuce, tomatoes and avocados; you can even add shrimp.
