Ingredients

  • 1 cup uncooked regular long-grain white rice
  • 2 cups water
  • 1 tablespoon chili oil or vegetable oil
  • 1 lb pork tenderloin, cut into 1/2-inch slices
  • 1 bag (1 lb) frozen broccoli, carrots and cauliflower
  • 3 tablespoons apricot preserves
  • 1 tablespoon oyster sauce or hoisin sauce

    Cook rice in water as directed on package, omitting salt.

    Meanwhile, heat 12-inch skillet over medium-high heat. Add oil; rotate skillet to coat bottom. Cook pork in oil 4 to 5 minutes, stirring constantly, until no longer pink in center.

    Add frozen vegetables. Cook and stir 2 minutes. Stir in preserves and oyster sauce. Cook and stir about 30 seconds or until hot. Serve with rice.

    You could use broccoli florets instead of the vegetable mixture.

    Be sure not to overcook the tender slices of pork; cook just until they are no longer pink.
