Almond Strawberry Shortbread Cookies

Last week my fiancé had some friends over to watch a big game on our TV. That said TV we own was specifically bought by him because he had to have a 65-inch screen so he can watch sporting events on a big and loud level. Those guys get really intense about athletics on the tube. A lot of screaming and a lot of cheering comes roaring into my kitchen as I make snacks for them. I remember my guy coming into the kitchen after a game and he seemed so happy and joyful, almost as if he was on another planet because his team had won. I asked him right then and there to explain his feelings to me. He said that the only word he could think of to describe his mood at that moment was euphoric. I smiled at him and thought he was being silly. I guess the face I made after he said this to me offended him because he started to say that I would never understand something like that and too bad for me because it was such an amazing thing. Of course I then took offense to him for saying that and told him that I had felt euphoric before and not only that, I could feel like that every afternoon if I wanted. He then asked, "How?" I said "Cookies!" That's right. I said cookies because I really feel that way about them. When I'm making cookies, I have this feeling of intense, exaggerated happiness because I love what I am doing and second, I can't live without the taste of cookies! Of course he laughed at me as if to say that my euphoria isn't as good as his. Well, I learned that day that the frenzied elation that is euphoria comes in all types of ways. I even now make cookies for him and his buddies so they can have during their game watching. They'll probably all implode from all the heightened jubilation!

Ingredients

  • 1/3 cup granulated sugar
  • 1/2 cup butter, (room temperature – 1 stick)
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup sliced almonds
  • 1/3 cup strawberry jam
  • 1/2 cup powdered sugar
  • 1 teaspoon water
  • 1/2 teaspoon almond extract, for icing

Directions

    In a mixer, add sugar and butter. Mix until creamy smooth.

    Add in almond and vanilla extract. Mix to combine.

    Slowly pour in flour and continue to mix on low.

    Once combined, cover dough and place in the fridge for one hour.

    Preheat oven to 350° F.

    Scoop 1 1/2 tablespoons of dough into hand, then roll into a ball.

    Place on a baking mat lined cookie sheet 2 inches apart.

    Dent the top of each cookie ball with your thumb, and push down to leave your imprint in the cookie.

    Sprinkle the out side of the cookie with a few almond slices.

    Fill each center of the cookies with 1/2 teaspoon of jam.

    Place in the oven and bake for 12 to 14 minutes.

    Remove from oven and allow to fully cool.

    To make the icing: In a small bowl whisk together powdered sugar, water, and almond extract.

    Place icing in a small dispenser and drizzle over cooled cookies. Enjoy!
