This almond chicken salad is delicious and it’s one of those recipes you can prepare ahead of time so you have something flavorful and filling to bring to work or pack in your picnic on summer days. Try this recipe for yourself; I’m sure it won’t be the first or only time you prepare it. At least in my home, it’s been a hit, and it’s super easy to put together. Plus, it’s a tasty way to use leftover chicken. Enjoy!

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 green onion, chopped
  • 1/4 cup chopped parsley
  • 1/2 cup sliced almonds
  • 1/4 cup dried blueberries
  • 6 tablespoons mayonnaise
  • Salt and pepper, to taste
  • Juice from 1 lemon

Directions

    Put the chicken in a large container.

    Add the green onion, parsley, almonds and blueberries. Mix well.

    Add the mayonnaise, salt and pepper and lemon juice. Stir, and serve.

    For a different touch, serve this salad as a starter over patacones or as the main dish over a bed of chopped lettuce.
