Almojábanas are very popular in some countries of Latin America, especially in Colombia. They're round breads made of corn and cheese. There are many recipes for almojábanas, some are made with corn flour, others are made with rice flour and some combine both, like in this case. They're very easy to make and are perfect as a light snack or as part of your lunch. If your family likes cheese, you'll find that they will love this recipe. I give it to my children as a snack and I always add fruit or a bit of apple juice. I hope you like it.

Ingredients

  • 1/2 cups of Bisquick™ Original baking mix
  • 3/4 cup of prepared corn flour (flour to make tortillas)
  • 1/2 teaspoon of salt
  • 1 tablespoon of melted butter
  • 1 egg
  • 1 cup of cotija cheese, grated
  • 1 cup of Monterey Jack cheese, grated
  • 4 tablespoons of milk

Directions

    Preheat the oven to 400°F.

    Grease the baking dish with cooking spray.

    Mix the Bisquick, corn flour and salt in a large bowl. Add the butter, egg, cotija and Monterey Jack cheese. Use your hands to mix the ingredients into dough. Add the milk as you need to until you have soft and moist dough. Add more milk one tablespoon at a time.

    Divide the dough in half, and each half in half. Continue to do this until you have 16 pieces.

    Take one piece of dough in your hands and create a ball, hold the ball in one hand and use the other hand to firmly pat the dough to flatten the surface a bit. Place each one in the baking dish. Repeat until you have 16 almojábanas.

    Bake for 15-20 minutes or until they brown a bit. Remove from the oven and let sit for 5 minutes.
